12 Days of Christmas Appetizers Pt 8 🎅  Makes 18-20   Dough: 300 plain flour 175g warm water  2 x tbs olive oil  1 x tsp salt  Filling: 200g Frozen spinach 1/2 cup water  1 onion chopped  Salt and pepper 200g Feta  100g cream cheese 100g mozzarella   30g melted butter for brushing  Topping: Egg yolk & 1 tsp milk Sesame seeds  If you want to see how I make the Borek dough you can see it on the big spiral wheel I made on my page. Mix the salt into the flour, add the warm water and olive oil. Knead for about 5 min until the dough is smooth. Dip or rub the dough in olive oil until it’s coated, cover and rest for at least 1.5 hours (longer is fine) Make filling by adding the onion to a hot pan and fry for a few minutes, throw in the frozen spinach, salt and pepper and water, let water evaporate and keep moving the spinach around. By the time the water is gone the spinach should be defrosted and sautéed. (The water stops the onion and spinach from over cooking)  Cool on plate and mix in cheeses .  Preheat oven to 180C After resting sprinkle with flour and roll it out as thin as you can as I’ve done in the reel, brush with melted butter. Fold it over horizontally in half and sprinkle flour and brush with butter again. Fold over in thirds as shown in the reel sprinkle some more flour and roll it out again into a large rectangle similar to the size you rolled the first time (this creates 6 layers like borek or filo dough)  Don’t worry if some butter seeps out whilst rolling. Trim off any thick edges around the pastry. Add the filling and spread leaving about 1 or 2cm around the edges. Roll it up like a cinnamon roll and slice about 1 inch to 1.5 inches thick. (Clean your knife after each cut to make it easier) flatten down as shown in reel and add to your baking dish (you may need two dishes) with parchment paper. Brush with egg wash and sprinkle with sesame seeds.  Bake for 30-35 minutes depending how crunchy you want them. Enjoy as they are or dipped in yogurt. Delicious hot or cold. I froze some of these and cooked straight from frozen and they came out perfect.
