(450g) boneless, skinless chicken breasts • sea salt & black pepper, to taste • 4 tsp. basil pesto • 1 tomato, sliced • 6 tbsp. shredded mozzarella cheese • 2 tsp. shredded Parmesan cheese Directions • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. • Slice the chicken breasts horizontally to create four thinner fillets. Season with salt and pepper. • Place the chicken onto the prepared baking sheet. Spread a teaspoon of pesto over each piece of chicken. • Bake in the oven for 15 minutes or until the chicken is cooked. • Remove the baking sheet from the oven.
