@mariannas_pantry: TACO SKILLET My favorite easy high protein dinner that is also perfect for meal prep! Ingredients 16 oz 98% lean ground chicken (could also use turkey or beef) 1 package of taco seasoning 1 jar of salsa verde 1 large orange bell pepper, diced 1 can of black beans, drained and rinsed 1 can of corn For serving: Shredded lettuce Low fat shredded cheddar cheese Avocado Tortilla chips (i used @HIPPEAS Snacks) Instructions: 1. Spray a nonstick skillet with nonstick cooking spray and place over medium heat. Add ground chicken and cook on each side for 1 minute before breaking it into crumbles with a spatula. Add half the taco seasoning and half the jar of salsa verde and mix everything together. 2. Once chicken is almost done cooking reduce heat to low and add bell pepper, beans, corn, the rest of the taco seasoning and the rest of the salad. Mix everything together until well combined. Cook for 2 minutes then remove from heat. 3. Top with shredded cheese and lettuce (optional), avocado, and serve with tortilla chips! You can eat this as a dip, or have it in tacos, in a rice bowl, as a salad, there are so many options! Store leftovers in the fridge for up to 3 days. #highprotein #healthydinner #highproteinmeals
