@wyseguide: I make a big batch of this chopped salad and keep it in the refrigerator for any night that I want something bright, full of citrus flavor, and super delicious! INGREDIENTS - 1 bunch kale, chopped - 2 cups cooked quinoa (1 cup uncooked) - 1 hothouse cucumber, diced - 3/4 cup chopped red onion - 1/4 cup chopped fresh dill - 1/3 cup chopped fresh parsley - 1 can (15 oz) chickpeas, rinsed and drained - 1 lb roasted chicken, shredded - 2 lemons, juiced - 1/3 cup olive oil - 1 tsp kosher salt - 1/2 tsp black pepper INSTRUCTIONS 1. Add the kale and hot cooked quinoa to a bowl. Stir together and allow the kale to wilt slightly. 2. All of the remaining ingredients and mix to combine. 3. Serve immediately or chilled.
