Feta cheese is always found in Greek dishes, but this localized version is a great addition to your next dinner party! ✨ It’s easy to prepare and it’s a great dip for crackers, veggie sticks, or pita bread. This is day nine of making Pinoy veggie dishes for you. What should we cook next? ❤️ MUNGGO AT FETA Ingredients: ½ cup munggo, soaked in water overnight 1 pc red onion, sliced thinly and soaked in ice cold water 3 pcs tomatoes, sliced thinly ¼ tsp salt ⅛ tsp pepper 1 tbsp coriander leaves 1 tbsp vinegar 1 extra virgin olive oil 1 cup crumbled feta ½ cup greek yogurt ¼ tsp salt ⅛ tsp pepper ½ tbsp lemon juice Zest of 1 lemon 1 clove garlic, grated coriander leaves pita Procedure: 1. Boil your munggo in water for 20 minutes. Strain and set aside. 2. In a bowl, combine tomatoes, salt, pepper, coriander, vinegar, olive oul, and munggo. 3. In another bowl, combine feta, yogurt, salt, pepper, lemon juice, lemon zest, and garlic. 4. Spread on a plate and top with munggo mixture and coriander. Serve with warm pita.
