Damascus-style sfeeha - one of my husband’s favourite dishes! The tender dough and perfectly spiced meat, with a hint of pomegranate molasses, bring back the flavors of home for him ♥️ Find my full recipe below: For the dough: 1.5 cups warm water 1 tablespoon instant yeast 1 tablespoon sugar 5 cups plain flour 1/2 cup yogurt 1 tablespoon salt 1/4 cup vegetable oil Add water, yeast, sugar in a bowl and whisk. Add 1.5 cups of plain flour to this and mix well. Cover and allow to rise for 15-20 mins. To the risen dough, add 1/2 cup yogurt, salt, 3 cups of plain flour and stir till incorporated. Add remaining half a cup of flour and vegetable oil. Knead the dough for 10 mins. It doesn’t need more rising time. But I made the dough before the topping, so l covered it in the bowl until topping was ready. Divide the dough into small balls of your desired size. Sprinkle some flour on a tray, put balls of dough on top then more flour. Cover with glad wrap until ready to use (so it doesn’t dry) For the topping: 3 tomatoes 3 onions A bunch of parsley 2 tablespoons of crushed garlic (or 5 whole pieces) Half a kilo minced meat 1/3 cup olive oil 1 tablespoon capsicum molasses/ capsicum paste 2 tablespoons pomegranate molasses 1 tablespoon tomato paste 1  teaspoon black pepper 1 teaspoon white pepper 1 teaspoon paprika 1 tablespoon salt Cut up onion and garlic and put into a food processor, process till smooth. Add chopped tomatoes and parsley, and process till smooth. Transfer to a bowl. Add minced meat, capsicum molasses, pomegranate molasses, tomato paste, salt, pepper, paprika and olive oil. Mix well with a wooden spoon until all well incorporated Sprinkle flour on bench top and roll out each dough ball (pretty thin), put topping on it then transfer to a baking tray and into a 200°C to ensure the meat is cooked (depends on the size of the sfeeha - mine took approx 10 mins).
