#Baklava Eclairs 💫 One of my most favorite types of eclairs! And a crowdpleaser! ✨ Filo tops: Ca. 180 g (baklava) filo pastry 100 g melted butter Layer a filo pastry sheet on a oven tray and brush it with butter, add another sheet on top and brush again. Repeat 10 times with butter inbetween the layers until you have around 8-10 layers of filosheets with butter. Use a knife or a pizza cutter to cut rectangles that are similar size to your eclairs and bake it in the oven at 200 °C (fan oven) for 15 minutes or until golden brown on top. Eclairs: 125 ml water 125 ml milk 125 g butter 145 g flour 2 teaspoons of sugar Around 3 eggs or 220 g egg (more or less you need to check the consistancy) Bring water, milk, sugar and butter to a light boil in a saucepan and get it off the heat. Fold in the flour with a silicone spacular and stirr till you get rid of any lumps. Add it back on low heat and “cook” your dough until a very thin layer of the evaporated milk starts to form on the bottom. Transfer the dough into a kitchen machine, whisk the eggs lightly and add the eggs a little at a time, while stirring on low. You can also do this by hand until the dough is glossy.  When the #dough is ready you’ll get a V shape when the dough slides down from the spacular. You can add more egg if this is not the case Let the dough rest in the fridge for around 1 hour, then pour it into a piping. Preheat oven to 200°C and lower the temperature to 180°C right before you place your eclairs into the oven.  Add a piece of parchment paper on baking tray and pipe the eclairs with a star tip. They will dubble in size, so make sure to leave 1,5 cm inbetween them. Dust with #icing sugar and freeze for 30 min. #Bake the eclairs for around 40 minutes. They need to be brown and hard on the outside or else they’ll collapse! Cream: Combine 200 g heavy cream, 70 g icing #sugar and 1 tsp #vanilla and zest from 1/3 lemon. Whisk on medium speed for 10-15 sec. Add 500 g mascarpone and whisk again till thickened 40-60 sec. Do not overmix! Fill the #eclairs. Pipe some cream on top and add the baklava tops & pistachio. You can also add some simple syrup!
