This is the easiest way to puff quinoa and make delicious energy bites! Energy balls -100 g puffed quinoa -1/3 cup pistachio butter -1 small banana -2tbsp agave -1tbsp coconut oil -2tbsp flax seed -1/2 cup almond flour FOR COATING: -100g white chocolate melted mixed with 1 teasp matcha powder, chopped pistachios ,1tbsp coconut oil and a pinch of sea salt Puffing the quinoa: * On medium heat, add half a cup of quinoa at a time to a non-stick pan, stirring constantly to prevent burning. * You’ll notice that some of the quinoa will start puffing. * Not all will puff, so remove from the heat before the puffed ones start burning. * To separate the puffed ones from the unpuffed, you can use a mesh sieve with large holes. Energy Bites: 1. Mix all the ingredients in a bowl and refrigerate. 2. Once chilled, the mixture will be easier to handle and shape into balls. 3. Coat the energy balls in the matcha pistachio chocolate mixture. 4. Refrigerate again to let the coating solidify. 5. These energy balls will be soft inside with a crunchy exterior—best served straight from the fridge. Alternative Coatings: * Roll the energy balls in coconut flakes or substitute almond flour with coconut flour. * You can also coat them in dark chocolate and chopped hazelnuts, using peanut butter instead of pistachio butter, and oat flour instead of almond flour.
