SUNDAY MEAL PREP 🍽️ This weeks meal prep consists of Chocolate Orange Overnight Oats for breakfast and a BBQ Fajita Bake for lunch! Make sure to press that save button for future meal prep inspo☝🏼 BREAKFAST: •Chocolate Orange Overnight Oats •342 kcals per portion - 37g PRO, 27g CHO, 8g FAT Serves 2 -60g of oats -25g of chocolate protein powder (I use @myprotein chocolate smooth) -2 tsp of cacao powder -20g of chia seeds -200ml of unsweetened almond milk -200g of 0% non fat Greek yoghurt -Orange juice and zest -Dark chocolate, grated Method: 1. Add the dry ingredients first and mix. Then add the milk and yoghurt, a squeeze of orange juice & zest. Stir well until combined. 2. Top with grated dark chocolate and leave overnight in the fridge. LUNCH: •BBQ Fajita Bake •372 kcals per portion - 43g PRO, 34g CHO, 8g FAT Serves 3: -300g of uncooked chicken breast -1 tsp of paprika -1 pack of wholegrain cooked rice -1/2 run of kidney beans -100g of sweetcorn -Cherry tomatoes -1 red onion -2 cloves of garlic -1 red & yellow pepper -1 tbsp of tomato purée -1 tsp each of paprika, chili powder & cumin -45g of reduced fat cream cheese -15g of BBQ sauce -30g of grated mozzarella/cheddar Method: 1. Cook the chicken in the air fryer with 1 tsp of paprika and shred once cooked. 2. Add the garlic and red onion to a sprayed pan with a little water and cook for 2 mins. Add in the tomatoes, peppers, tomato purée and the spices. Let the tomatoes cook and soften. 3. Add in the cream cheese and mix well. Then mix in the shredded chicken, cooked rice, kidney beans and sweetcorn. 4. Transfer to a baking tray and top with the BBQ sauce and cheese. 5. Bake in the oven at 180°C for 10-15 mins. 6.
