I was born in Zamora, Michoacán, and those who have been to Zamora know that a traditional lunch or snack is their famous Papas Zamoranas. A few years ago, I read somewhere that the first Mexican chef to receive a Michelin Star had a restaurant here in Chicago serving the very Papas Zamoranas I had grown up eating 🥹 When I found this out, I felt so proud knowing that someone else from Mexico was achieving such great accomplishments and serving a menu item I hold so dear. At the time, I was a broke college student working at Starbucks, so there was no way I would have considered going to a restaurant with a Michelin-starred chef, but Tzuco was always in the back of my mind. This year for my birthday, my boyfriend and I finally went, and oh my gosh, I was SO EXCITED. I didn’t get their Papas Zamoranas (on purpose, to make sure I’d return soon), but I did try a handful of their menu items, and I was left dreaming. My take on @tzucochicago Tzuco is that @chefcarlosgaytan took traditional Mexican dishes from so many regions of Mexico and worked his magic, transforming already exquisite Mexican food into something “new,” with different flavors popping out but without losing its core essence. That’s what I found so incredible about every single dish I had there.
