Foochow Red Wine Chicken Mee Sua (courtesy of @L E N G L U I 😁) is a traditional Foochow recipe that will warm your soul! Serves 6-8 Prep 5 mins Cook 15 mins Simmer 30 mins Ingredients 1 chicken, chopped 40g fresh black fungus 3 tbsp sesame oil 200g ginger, sliced 1 bottle red rice wine 1 litre boiling water Salt to taste 6-8 servings of mee sua Marinade 3 tbsp red rice wine paste 1/2 tsp salt 1 tbsp sesame oil 1 small knob shredded ginger 1. Marinate chicken with the marinade for at least an hour, covered in fridge. 2. Dry fry black fungus for 2 minutes, then set aside. 3. In a pot over medium heat, add sesame oil and ginger until fragrant. Add chicken, try not to overcrowd the pot, sear each piece until brown for maximum flavour. 4. Add 400ml of red rice wine and 1 litre of boiling water, then cover and let it simmer for 25 minutes. 5. Add black fungus to cook for 5 minutes. 6. Do a taste test and add salt / more wine to your liking. 7. Make the mee sua, mix immediately with the soup and eat up! #meesua #fuzhou #asianfood #EasyRecipe #sghomecook #sghomecooking #sgfoodie
