Mushroom ASMR: relaxing to the sweet sounds of me cutting up this #RedMouthedBolete or #Boletussubvelutipes. This is a mycorrhizal species that grows in Eastern North America associated with hardwoods. It has a pale brown cap and red stem lacking reticulation that quickly turn dark blue when handled. This species has bright red pores and pale yellow flesh that stain dark blue very quickly when injured. The blue staining is due to enzymatic oxidation of organic acids in the mushroom, it can be reversed by changing the pH (adding KOH turns the blue to bright yellow). . The common advice for edibility if boletes is to avoid red-pores boletes that stain blue, but there are exceptions. The Frosts Bolete has these characteristics and is edible. The Liver Bolete in California is a similar looking mushroom and I have tried that before and enjoyed it. The common knowledge around these mushrooms is to avoid them as edibles, but many Eastern Europeans love eating this kind of mushroom. I took this chopped up mushroom and cooked it well in a pan and tried a small piece. It did not have the same sweetness as many other boletes, but had a mild mushroom flavor and good texture. I will consider experimenting more in the future, but will still exercise caution. Beware of other toxic boletes like Boletus sensibilis and Rubroboletus species (which can look quite similar).  . I enjoy the sound of slicing up these perfect little buttons. The resonance of the tapping shows how dense they are and the slicing gives you a sense of the crispy texture.
