@tesco: Italian chicken chopped sandwich 🥪 Serves 2 Takes 10 mins 1 large handful rocket (approx. ½ × 60g bag) small handful fresh basil leaves 1 cooked chicken breast 5-6 sundried tomatoes 1 tbsp black olives ½ ball mozzarella ½ small red onion, finely sliced ½ avocado ¼ lemon, juiced 3 tbsp mayonnaise 2 tsp Italian basil pesto 1 baguette 1. Add the rocket, basil leaves, chicken breast, sundried tomatoes, black olives, mozzarella, red onion and avocado flesh to a large board. Squeeze over the lemon juice and season. Using a large sharp knife, chop everything into smaller than bitesized pieces until everything is well combined. 2. Mix together the mavonnaise and the pesto in a small bowl. 3. Cut the baguette lengthways and spread the pesto mayo across one half. 4. Scrape the chopped salad into roughly the same shape as the baguette, then place the baguette, mayo side down onto the chopped salad.
