Meat madghoot @canarybasmati Ingredients: - 2 diced onions - drizzle of oil - 1 heaping tbsp tomato paste - 2 kg lamb - cups basmati rice @canarybasmati - 3 tomatoes ( blended ) - 3 heads of garlic - a couple of chilies Aromatics: - 3 bay leaves - 4 cardamom - 2 cloves - 2 dried limes ( optional ) - a cinnamon stick Spices: - salt & pepper - 1 tsp cumin powder - 1 tsp coriander powder - 1 tsp cinnamon powder - saute the onions till browned. Add the tomato paste and stir for a couple of minutes before adding the lamb. - add all the spices. Aromatics and the tomato juice along with the water: ( 2 cups for each cup of rice if you want it fluffy) - cover the pressure cooker on high till it whistles. Then drop the heat to low and let it cook for 45-50 minutes. - open the pressure cooker and let it boil on high when adding the rice. Then seal again on high till it whistles drop the heat for 11 minutes. - flip the pot on a serving plate. Serve it with a simple chutney and enjoy. #food #cooking #meat #rice
