@alfiecooks_: CRISPY ENOKI MUSHROOMS 🍄 This is my first time trying enoki mushrooms, and WOW did they not disappoint. And when cooked + seasoned properly, they taste look EXACTLY like fried chicken (from what I can remember 🤔) AND all the better dunked into a creamy dill pickle dip too (recipe below). So, for those of us who don’t eat chicken, why WOULDN’T we give it a go? And even if you do eat chicken, why not have a try? I’d leave you my full written recipe, but I was inspired by the enoki mushroom queen @Rhi + followed her recipe letter by letter, so I’ll redirect you there (it’s pinned at the top of her feed). But the recipe for my dip below - so enjoy, and let me know if you give it a go! DILL PICKLE DIP 100g mayo 1 tbsp cornichons 1 tbsp jalapeños Handful fresh dill Handful fresh parsley 1 lemon 1 garlic clove 1 tsp chilli sauce (optional) Salt Pepper Finely chop the pickles, jalapeños + herbs. Grate the garlic, then mix into the mayo. Squeeze in juice of 1/2 a lemon, season to taste, add the chilli if you like, then dip + enjoy! #enoki #mushrooms #plantbasedfood #kfc #friedchicken

I find fried Oyster mushrooms closer to chicken. Enoki have fibrous stipe that are a little crunchy.

Mix well and let it rest for 5 minutes. Add fine semolina, flour, butter, and salt. Knead for 10-12 minutes until smooth and elastic.
