but how do you get things to not stick but also not burn too quickly? like minced garlic/veg. i love stainless steel but always struggle with temp control :(

How would you do this on something you don’t want to cook too quickly? I made parm crusted sandwich and it stuck badly. But I don’t want to burn crust during convection.

It is true if you cook only 1 thing in the pan. But it will stick anyway if you put multiple ingredients like making fried rice, stir fry noodle etc.
