You don’t actually need the coconut oil. It becomes a resistant starch as soon as refrigerated or you could try that and see if it’s the same.

refrigerating rice, pasta, potatoes etc. and reheating next day has helped my husband's sugar levels immensely! also eating pickles (a full 1) if he spikes usually brings it back down within 45min

It's not the oil, it's the refrigeration. you can do this with regular rice. leave it overnight. eat it the next day. no spike

So why not just eat protein with rice? Shouldn’t protein help keep your sugar regulated. I think most things will spike your sugar levels alone.
