Please explain why I can eat this everyday.  Desi Chicken Roast. Ingredients: For chicken: - 4-5 Chicken Drumsticks - 4 Chicken Thighs - 6 Garlic Cloves (grated) - Large Pinch of Salt - 3/4 tsp Turmeric - 1 tsp Cumin - 1.5 tsp Coriander Powder - 1 tsp Chilli Powder - 1 Large Lemon Wedge (juice) - Splash of Vegetable Oil For Onions: - 3 tbsp Vegetable Oil - 3 White Onion - 3 Bayleaves - 1-2 Cinnamon Sticks - 5-6 Peppercorns  - 2-3 Cardamom Pods (optional) - 4 Garlic Cloves - 1 tsp Ginger Paste (or fresh) - 1/2 tsp Salt (add more if needed) - 1/2 tsp Turmeric - 1/2 tsp Cumin (optional) - 1/2 tsp Coriander Powder - 1/2 tsp Chilli Powder - 3-4 Fresh Green Chillies - Splash of water - Handful Fresh Coriander Method: 1. Cut slits into the chicken pieces. Grate the garlic in and then add in the all spices and ingredients listed. Then set aside to marinade for at least an hour (or not, do whatever). 2. Add a dash of oil to a pan, then add the chicken pieces and sear on both sides till browned. Then remove the chicken. 3. Put chicken piece on a wire rack, and place in oven for 30-35 minutes, gas mark 6, flip half way. 4. Whilst chicken is cooking, heat some oil in the same pan used previously, then add the cinnamon stick, bayleaves, peppercorns and cardamom pods and cook for a minute. Then slice the onions and add them in.  5. Chop garlic and add to pan along with the ginger paste and salt. Cook for 10 minutes until onions are softened, removing the cinnamon stick half way through. 6. Add the salt and spices listed and chillies and a splash of water, stir and cook for a few minutes or until the oil separates. 7. Once chicken is done, remove from oven and add them into the onions. Mix the chicken and onions together cook for a few minutes on medium heat. 8. Chop and add the coriander. Stir, put lid on and cook for 5-10 minutes on low heat. Remove lid, reduce any excess water (shouldn’t really be much or any). But you want a dry roast with flavourful onions. 9. Once done, stir the onions and chicken once more (be mindful not to break the chicken apart), plate up, and enjoy. #indianfood #chickencurry #chickenrecipes
