weird question what would happen if I used the Dutch processed in red velvet cake? would it have the intended effect in the texture? or would nothing happen

I remember having to be very specific with the cocoa powder when I made a traditional red velvet cake (relies on a chemical reaction to get the red colour rather than using a tonne of dye)

Is this an American thing? I dont think I have ever seen the non-processed one in middle Europe or any recipe I've ever used (and I bake quite often)

would it be a even swap for baking soda in the baking powder? I haven’t found a Coco powder I like the taste yet I try a lot of the healthier brands that said cacao powder But none of them taste, very chocolatey. Is there a brand that you use?

When I made double chocolate cookies using Dutch process I added baking powder and it didn’t help the cookies spread when it was baking in the oven.
