@dollartreedinners: You can make this colorful Easter cookie platter from a single box of cake mix! You will need: 1 box of vanilla cake mix 1/2 cup of oil 2 eggs (or swap for 1/2 cup of unsweetened applesauce) Food coloring powdered sugar (optional) Mix the cake mix, oil, and eggs/applesauce until well combined. Should be a thick cookie dough like consistency. Divide this evenly between 4 bowls and add food coloring of choice. We are going for pastel easter colors so I did a couple of drops each of red, yellow, green and for a purple I used 1 to 2 drops of blue and 3 to 4 drops of red. Roll into teaspoon sized balls and dredge in powdered sugar.
