ONE POT FRENCH ONION PASTA 🧅 Ingredients: - 2 tbsp unsalted butter - 3 large brown onions, halved and thinly sliced - ¼ cup sherry - ½ cup white wine - 3 large sprig fresh thyme - 1 tbsp Salt - 1 tbsp Black pepper - 400g uncooked rigatoni - 1L Campbells beef stock - 1 tbsp Worcestershire sauce - ½ cup freshly grated parmesan, plus more for serving - ½ cup heavy cream - Pinch of parsley for serving Method: 1. Melt butter in a large pot over medium heat. Add onion and season with salt. Stir then cover and saute for 10 minutes. 2. Remove lid and cook until onions are caramelized (approx. another 10 mins). 3. Pour in the sherry and white wine to deglaze the brown bits on the bottom of the pan 4. Add sprigs of fresh thyme and season to taste with salt and pepper 5. Add rigatoni then pour in Campbell's Beef Stock and Worcestershire Sauce. Bring to a boil and cook for about 15 minutes or until pasta is al dente 6. Lower the heat. Discard thyme sprigs. Stir in freshly grated parmesan cheese and cream until well combined. 7. Serve with parsley and parmesan cheese
