Turkey & Veggie chili: 2 tsp avocado oil 1 yellow onion, chopped 3 garlic cloves, minced 1 red or green bell pepper, chopped 1 large carrot, chopped 1 zucchini, chopped 1 pound ground turkey 1 Tbsp chili powder 1 packet of taco seasoning 1 tsp cumin 1 tsp dried oregano Salt & pepper to taste 28 oz can diced or crushed tomatoes 1 C chicken bone broth 15 oz can black beans, rinsed & drained 15 oz can red kidney beans, rinsed & drained Optional toppings: Cheese Plain greek yogurt Avocado Heat oil in a large pot. Saute onion, bell pepper and carrot until onion is translucent. Add garlic and zucchini and continue to saute. Once zucchini is just fork tender, either remove veggies and brown the turkey, or add the turkey in with the vegetables if the pot is big enough. Cook until turkey is cooked through. Next add in spices and stir for ~30 seconds or until fragrant. Add in the rest of the ingredients and bring to a boil. Lower heat & simmer for 10-30 minutes or until it is thickened to your liking. Season with salt & pepper as needed. Serve with cheese, plain greek yogurt and avocado if desired. Enjoy! *feel free to sub in any meat & veggies that you prefer!
RECIPE 👇🏼 This recipe is sooo delish especially in the fall when squash is in season 🤌🏼 Spaghetti squash bowls🍝 2 spaghetti squash avocado oil salt & pepper 1 yellow onion, diced 2 carrots, diced 1 zucchini, diced 1 can of mushrooms, chopped 1 lb ground turkey or beef 3 cloves garlic, minced 1 tsp Italian seasoning 1 jar of marinara of choice (I love the Rao’s brand) optional: parmesan, fresh basil 1.Slice spaghetti squash in halves, clean the seeds out, rub with oil, & sprinkle with salt & pepper. Roast at 400 F, cut side up on a baking sheet, for 45 minutes or until fork tender. 2.While the squash is cooking, heat a large pan over medium heat & add a drizzle of oil. 3.Add the onion, carrots & a sprinkle of salt then sauté for 5 minutes. Add zucchini & continue to cook. 4.Once vegetables are mostly cooked through, add garlic, Italian seasoning & mushrooms then sauté for another minute. 5. Add the ground meat & cook through. Add the sauce & heat through. 6.Use a fork to pull apart & separate the spaghetti squash. 7.Scoop the sauce into the spaghetti squash bowl & top with cheese & basil.
