@marcus.costanzo: New flavours unlocked with Coopers 🫢🍻 Full RECIPE Below! 👨🍳⤵️ Serves 2 BIG Sandwiches 😇 🧀🍻 Cheese Sauce Ingredients: - 35g butter, - 60 ml of Coopers Botanic Ale, - 3 tsp mustard, - 12g plain all-purpose flour, - 140g high quality Cheddar Cheese, hand grated (not packet grated), - 70g Cream cheese, - Pinch of Salt and Pepper, - 1/2 tsp Paprika & 1/2 tsp garlic powder, - Additional Cheddar Cheese for melting on top of bread, - Worcestershire sauce, for drizzling (optional). 🥪 Sandwich Ingredients: - 4 big slices of preferred sandwich bread, cut at least 2.5cm thick. - Drizzle of olive oil for cooking - 4 Thick Pork Sausages. - 6 slices of short cut bacon. - 4 eggs, cooked sunny side up. - Large handful Thinly Chopped Chives - Handful of large, crinkle cut sea salt potato chips. - Pinch Salt and Pepper. 🥪 Sandwich Method: 1. Chop and prepare all other sandwich ingredients ready for cooking. 2. In a large pan, fry up your bacon on a low heat for around 2 minutes on each side, or until browned and crispy. 3. In the residual bacon grease, add in your sausages and cook until browned nicely. When sausages have slightly browned, optionally drizzle beer into the pan and let that cook down with the sausages until they’re completed. 4. Finally, cook your eggs to your preference and aside all ingredients while you make the cheese sauce. Or, complete these processes simultaneously! 👨🍳 📚Cheese Sauce Method: 1. On a low heat - Melt the butter in a small saucepan over low heat. Let the butter bubble slightly and begin to brown, then lower (or turn off) your heat while you mix in your flower bit by bit. Incorporate the flower well until it begins to look like a thick paste. 2. Next, add the beer and mustard. Raise the heat again and stir/ cook for 1-2 minutes. 3. Then add the cream cheese and stir slowly until melted. Follow this by adding your shredded cheese and continue stirring thoroughly until saucy texture occurs. 4. Finally, mix in the seasonings. Then remove cheese sauce from heat and set aside until ready to serve on sandwich. 🧐 NOTES: - Make sure to stir with intent. This loosens the sauce more and better incorporates your ingredients. - Note that the more cheese you add, the stringier and less ‘saucy’ the mix becomes. - If the sauce stiffens you can add more beer to loosen it up. Note that the key to achieving that saucy texture (vs just ‘melted cheese in a pot’) is getting that ‘flour and butter’ mix right at the beginning. 👷♂️ 🛠️Assembly: 1. Preheat oven on broiler setting. Place ‘already toasted’ bread slices on a baking tray with baking paper. 2. Spoon the cheese mixture evenly over the bread slices, smoothing out right to the edges to avoid burnt crusts. Then sprinkle over some additional bits of grated cheddar cheese. 3. Grill the bread until toasted and cheese is bubbling. Serve immediately drizzled with Worcestershire saucen (optional).
