Ingredients: - 1 pound boneless, skinless chicken thighs, cut into chunks - 1 cup farro, rinsed - 2 tablespoons olive oil - 1 onion, chopped - 3 garlic cloves, minced - 1 red bell pepper, chopped - 1 zucchini, chopped - 1 cup cherry tomatoes, halved - 4 cups low-sodium chicken broth - 1 teaspoon dried oregano - 1 teaspoon dried thyme - 1/2 teaspoon black pepper - 1/2 teaspoon paprika - Salt substitute or minimal salt as preferred - Fresh basil for garnish (optional) Instructions: 1. Heat olive oil in a large pot over medium heat. 2. Add chicken chunks, season with oregano, thyme, paprika, and pepper. Cook until browned, about 5-7 minutes. 3. Add onion and garlic; sauté until translucent, about 3 minutes. 4. Stir in bell pepper and zucchini; cook for another 3 minutes. 5. Add rinsed farro and cherry tomatoes to the pot. 6. Pour in chicken broth; bring to a boil. 7. Reduce heat, cover, and simmer for 25-30 minutes, or until farro is tender and chicken is cooked through. 8. Adjust seasoning with salt substitute or minimal salt. Garnish with fresh basil before serving. 9.
