There are actually quite a few reasons! •for flavor - trust me on this one, sourdough does NOT taste the same without it! • helps to preserve the bread. • helps develop the gluten - without it, you'll end up with a dense, flat loaf. So, what type of salt is best to use in sourdough? --> I personally prefer sea salt or fine pink Himalayan salt. What should you do if you forget to add salt to your sourdough? --> PANIC 5 . Kidding. Kind of... All jokes aside, it's the worst feeling to prep a loaf of dough, only to realize you've forgotten the salt. This is why I personally choose to add the salt at the beginning of my basic sourdough bread recipe, because it reduces the chances that I'II forget later on. But if you do forget, here's what you can do: 🧂if you haven't finished your stretch and folds, sprinkle the salt on top of the dough and after 2-3 sets of stretch and folds it should be incorporated. 🧂if you've completed your stretch and folds and are at the bulk ferment stage, you can still try to work it in, but you risk losing some of the oven spring. 🫙if you've shaped your dough, there's not a lot you can do at this point. But you can spray the surface of your dough with water and sprinkle the salt on top prior to baking which can help some. 🧂if you've already baked the dough, salted butter it is!
