Ingredients ⬇️. 3/4 cup (125g) shredded carrots. 1/2 cup (50g) pecans or any nuts, 2 large eggs, room temp. 1/2 cup (100g) brown sugar. 1/4 cup (60ml) vegetable oil 1/4 cup (60g) sour cream, or natural yogurt 1/4 cup of milk or buttermilk 1 1/4 cups (150g) all-purpose flour 1 tsp baking powder. 1/2 tsp baking soda 1/4 tsp salt. 1 tsp ground cinnamon. Preheat oven to 350°F (175°C). Mixed all the ingredients and Bake for 18-20 mins until toothpick poked in center comes out clean.
