Enjoy! #Recipe 1/4 cup honey, maple syrup, or brown sugar 1/2 cup low sodium soy sauce 2 garlic cloves, minced 1 cup chicken broth 1 cup uncooked white rice 1/2 cup red onion, diced 1 red bell pepper, chopped 1 cup pineapple, chopped 1 lb chicken breast or tenderloins, diced into 1-inch pieces In a bowl, whisk together honey, soy sauce, garlic, and chicken broth. To a baking dish, add the uncooked rice, onion, bell pepper, pineapple and chicken. Top with soy sauce mixture and mix to combine. Cover the baking dish with foil and bake at 425F for 50 minutes. Then, uncover, stir ingredients, and return to the oven, uncovered, and bake for an additional 10 minutes, until chicken is cooked through and rice is tender.
