~Sourdough Ciabatta~ For my bake in 60 seconds series today, let’s make ciabatta.  Ciabatta is easy to make and fantastic for sandwiches. We had this for our Sunday lunch, where everyone diy their favourite flavor combo! *Dough* 270g Bread Flour 30g Wholewheat flour 240g water 60g sourdough starter 6g salt *Soaked Seeds * 20g flaxseed 5g black sesame 5g white sesame  40g water To prepare soaker seeds: ➡️ heat up frying pan with medium flame ➡️ toast seeds until it start to crackle and pop.  ➡️ soak the toaster seeds with water. Set aside.   Process for Dough ➡️ Autokyse – Add water and all flour, rest for 60mins ➡️ Add starter and rest for 15mins ➡️ Add salt and rest for 15mins ➡️ Make a set of stretch and fold and rest for 15mins ➡️ Mist the counter. Stretch the dough on the counter ➡️ Spread the soaked seeds across, gently laminate and fold up the dough  ➡️ Transfer dough to greased container, rest for 30mins ➡️ Make 1st cold fold, rest for 45mins ➡️ Make 2nd coil fold, rest for 60mins ➡️ Repeat for another set of coil fold if you find dough is not strong enough yet ➡️ When dough is puffy and sufficiently proofed (approx. 5-6hrs at 25C), retard dough in fridge (<4C) overnight.  ➡️ next day bring dough out from fridge. tip out onto a floured bench and cut into 4 rectangles.  ➡️ proof for 45-60mins at 28C  ➡️ Bake in preheated oven with baking steel/pizza stone and lava rocks ➡️ Steam bake at 250C for 10mins, remove lava rock tray and bake at 220-230C for 10-12mins  ➡️ Cool on the cooling rack, enjoy making your own ciabatta sandwiches. #sourdough #levain #naturalyeast #wildyeast #artisanbread #artisansourdough #wholewheat  #sourdoughbread #ciabatta #ciabattasandwich #sourdoughciabatta #slipperbread
