They knew the pole that the avatar gets born in is cyclical too. The last one was born in the north so they knew the next avatar would be born in the South and then the Earth kingdom after that.

the avatar rotates between temples within the nations, the last was northern so the next water avatar would've been in the south, like Korra was.

To be fair, the 1st time watching it I found it odd that he could kill the fish with fire while it was underwater. it wasn't even an explosion or sustained stream just a burst of fire.

the LA stabbing vs bending is probably a budget choice. Stabing is much cheaper in fx than bending.
