A quick, one-pot Mediterranean-inspired chicken stew with cauliflower rice, fiber-rich vegetables, fermented olives, and anti-inflammatory turmeric, all compliant with paleo, keto, and low-carb diets. Ingredients: - 1 lb (450g) boneless, skinless chicken thighs, cut into chunks - 2 tbsp olive oil - 1 onion, chopped - 3 cloves garlic, minced - 1 zucchini, sliced - 1 red bell pepper, chopped - 2 cups fresh spinach, chopped - 1/4 cup fermented olives, sliced - 1 tsp ground turmeric - 1 tsp paprika - 1/2 tsp cumin - 1/4 tsp chili flakes (optional for heat) - 1 cup cauliflower rice - 2 cups low-sodium chicken broth - Salt and pepper to taste Instructions: 1. Heat olive oil in a large (preferably one-pot) skillet or pot over medium-high heat. 2. Add chicken chunks, season with salt, pepper, turmeric, paprika, cumin, and chili flakes. Cook until browned, about 5-7 minutes. 3. Add chopped onion and garlic to the pot; sauté until translucent, about 2-3 minutes. 4. Stir in sliced zucchini, bell peppers, and fermented olives; cook for another 3-4 minutes. 5. Pour in chicken broth, bring to a simmer, cover, and cook for 10 minutes to allow flavors to meld. 6. Add cauliflower rice and spinach; stir well and cook for an additional 3-5 minutes until the cauliflower is tender and spinach is wilted. 7. Taste and adjust seasoning as needed. Serve hot. #Recipe #cooking #foodtiktok #homemade #EasyRecipes #DinnerIdeas #mealprep Save this for later!
