And yes, they can be found in convenience stores in Japan and they’re AMAZING—also I don’t buy eggs from convenience stores in the U.S. 😂 I’m scared of them lol 😆 Tamagoyaki (玉子焼き) Makes 1 omelette Ingredients: - 5-7 eggs (the more you use, the fluffier it will come out) - 1 tablespoon dashi - 1 tablespoon soy sauce - 1/4 teaspoon sugar - 1/2 tablespoon mirin - Pinch of salt Instructions: 1. In a medium-sized bowl, whisk together your ingredients until combined, being careful not to overmix. 2. Heat neutral oil in a tamagoyaki pan over medium-high heat, being sure every inch is covered in oil. 3. Pour about 1/5 of the egg mixture and tilt your pan so that it covers the entire bottom. Pop any air bubbles that appear with your chopsticks or spatula. 4. When it is cooked on the bottom but not quite yet on the top, use a spatula or chopsticks to roll the egg over 2-3 times until a small rectangle forms on the side of the pan. 5. Pour an additional 1/5 of the egg mixture and til again to cover the bottom. Use your spatula to lift the rectangular egg from step 3 so that the newly poured egg mixture will go under it.
