Autumnal Fig, Sourdough Crouton & Goat’s Cheese Salad Make the most of fig season guys, and this Fig, Sourdough Crouton & Goat’s Cheese Salad is a perfect balance of sweet, salty, crunch and creaminess. A perfect shift into autumn, simple, quick and delicous. 485 kcal & 27g protein * 1 ripe black fig, cut into segments * 1-2 slices lean cured ham * 80g crumbled goat’s cheese * 1/4 cucumber, diced * A few handfuls of mixed salad leaves * 50g slice of sourdough, cut into croutons * 1/4 tsp garlic granules * 1/4 tsp dried rosemary * Salt & pepper to taste For the dressing: * 1 tbsp balsamic vinegar * 1 tsp honey * 1/4 red onion, thinly sliced Toss sourdough cubes with garlic granules, dried rosemary, salt, and pepper. Bake at 180°C (350°F) for 10-12 minutes until golden and crisp, or air fry at 180°C (350°F) for 6-8 minutes. Heat a frying pan over medium heat, then dry-fry the Parma ham until crisp. Set aside and break into pieces. In a large mixing bowl, combine balsamic vinegar, honey, and thinly sliced red onion. Let sit for a few minutes to pickle slightly. Add salad leaves, figs, cucumber, croutons, crisped ham, and goat’s cheese to the mixing bowl with the dressing and onions.
