@jkhealthyliving: Mediterranean Kale Salad🌱 This Mediterranean kale salad makes for a perfect lunch to enjoy!😋 Follow @jkhealthyliving for more easy healthy meals. Ingredients: . 2 cups shredded kale . 1 cup cherry tomatoes, cut in half . 1 cup cooked quinoa . 1 English cucumber, chopped . 1/2 cup calamata olives, optional . 1 roasted red pepper, chopped . 1 cup chickpeas (I roasted them in the air fryer with paprika,turmeric, pepper) . 2 Tbsp EVOO . 1 Lemon juice . Salt & pepper to taste To assemble salad: Cook the quinoa according to package directions. Once cooked set aside and let it cool. Finely chop the kale and massage with extra virgin olive oil and lemon juice. (This will make it easier to digest and remove any bitter taste) Chop your cucumber, tomatoes and olives and set aside. Place in a bowl the kale ,your chopped veggies and the quinoa. In a small bowl whisk together the lemon juice, and olive oil ,salt and pepper. Toss over the salad and toss well to combine.
