All about the Sauce, Volume 2. 7 of 20… Slow Roasted Tomato and Mozzarella Bucatini. Simple and effective, the below serves 2. 8-10 vine tomatoes Olive oil Salt 4 garlic cloves 1 tbsp chilli flakes 2 tbsp tomato paste/puree Small handful of basil 100ml white wine 1 ball of mozzarella 220-240g Bucatini or spaghetti Grated Parmesan Black pepper to finish 1. Half the tomatoes drizzle with olive oil and sprinkle with salt. Roast at 150c/300f for 45-50 mins 2. Add a generous glug of olive oil to a pan over a low heat add the thinly sliced garlic, chilli flakes and basil. 3. Cook the pasta to al dente and set to one side reserving pasta water. 4. Add the tomato purée and cook out for 2-3 mins before adding the roasted tomatoes and white wine. Loosen with a little pasta water if needed 5. Blend with the mozzarella then pass through a sieve 6. Add the pan with the pasta coat really well, adding more Parmesan into the sauce while you stir and toss 7. Serve with more Parmesan and black pepper #pasta #sauce #Recipe
