Like biscuits, scones should be baked touching. Cut them into the pie shape on the baking tray & bake them like that. It will help them rise.

you can freeze them! the bakery I work at specializes I. scones and we make hundreds one day for the entire week. baked from frozen is fine.

We just bought a new fridge because while ours is perfectly fine- I can’t deal with the terrible skinny side by side anymore! That will be our garage fridge/freezer now.
