@thisbrownmom: Let’s talk Spices (Masala’s) Many of you ask me about the spices I use. Here are some of the spices that I use frequently in Indian cooking. I don’t know the exact ingredients or its intended purpose (Gorima didn’t share her secret recipes with me). I’ve tried and tested them for many years, through taste and smell, I’ve gathered (or maybe assume) what are in these blends. And with the help of the internet this is what I can tell you. All these spices are available at Gorimas and Osmans spices are available at most supermarkets. Kashmiri Masala: a mixed masala that includes Kashmiri Chilli powder which is used in Indian cooking to give a deep red colour to food. It often includes sweet paprika which deepens the red tones even more. I use this in my curries and often as a marinade. Turmeric: is known for its golden hue and slightly bitter flavor. It not only has a distinct taste but also adds a vibrant color to dishes. Turmeric is also valued for its health benefits. I find that turmeric also enhances that beautiful red color in curries. Leaf Masala: a masala blend that often includes dried curry leaves, bays leaves and various spices like cumin, coriander, and mustard seeds. This is a robust masala. I use it in dishes where I want a rustic flavour and texture. Sometimes in pasta and marinades, in braised curries too. Garam Masala: comprises of aromatic spices such as cinnamon, cardamom, cloves, and cumin. It adds depth and complexity to dishes, contributing a distinctive flavor to Indian cuisine. This is often added as an addition to mixed masala. Dhaniya/Jeera Powder: Dhaniya/jeera powder is a spice blend made from ground coriander (dhaniya) and cumin (jeera) seeds, commonly used in Indian cooking to add a warm, earthy flavor to dishes. I enjoy this in vegetarian and chicken dishes. Biryani masala: is a flavorful spice blend used in preparing biryani’s. It typically includes a mix of spices like cumin, coriander, cardamom, cloves, and cinnamon, contributing to the rich and aromatic taste of biryani. This specific blend also includes chilli powder and sometimes I make a biryani with this masala alone and the biryani turns out delicious. Rombo Rossi Masala: A fiery mixed masala known for its intense heat. Resembling the Kashmiri mix masala but with a bolder spice kick and a more pronounced rustic texture, it adds a fiery touch to dishes.
