Spray and line with parchment paper.  In a large bowl, combine the flour, granulated/brown sugar, baking soda, baking powder, salt, and cocoa powder. Whisk together until combined and set aside.  In a measuring cup or medium bowl, whisk together the eggs, vanilla, buttermilk, and sour cream. Pour the wet ingredients into the dry ingredients slowly and begin mixing gently. Once that’s mixed, pour in the hot coffee little by little and mix just until just combined and no more lumps. Don’t over mix! The batter will be thin.  Pour equally into the baking pans and bake for 35-38 minutes or until a toothpick comes out with a few moist crumbs. (check at 35 minutes) Let the cakes cool down before adding any frosting. A good way to keep them moist is wrapping them with plastic and storing in the fridge to cool down for a few hours/ overnight. Otherwise, just cool down completely on the counter.  Make the frosting by microwaving the chocolate chips, heavy cream and corn syrup in a heat safe bowl or glass measuring cup. Microwave in 30 second intervals and stir in between until melted.  Mix the butter and powdered sugar until fluffy. Add in the cocoa powder, salt, and vanilla.Mix again then mix on low as you pour in the melted chocolate until smooth.  I suggest coating the cake with frosting, chill in the fridge, then frost the rest.
