@_thesweetmonkey_: Cannoli Brownies 🍫🥛😋 Once a month going to be dropping a Cannoli recipe. These cannoli brownies are super fudgy and easy to make! You can also use boxed brownie and make just the cannoli filling. Full recipe below. Brownie: * 1/2 cup semi sweet chocolate chips * 3/4 cup vegetable oil * 1 cup granulated sugar * 1/2 cup brown sugar * 3 eggs, room temp * 2 1/2 tsp vanilla extract * 1 1/4 cup cocoa powder * 3/4 cup all-purpose flour * 1/2 tsp salt Cannoli Topping: * 1 1/2 cup whole milk ricotta cheese, strained * 8 oz mascarpone cheese * 1 cup powdered sugar * 1 tsp vanilla extract * 3/4 cup mini chocolate chips, plus additional mini chocolate chips for topping Optional: chocolate drizzle (melt a 4 oz. Chocolate bar) Instructions: * Brownies: preheat oven to 350° F. Melt 1/2 cup chocolate chips in the microwave and combine with oil. In a separate bowl combine sugars, eggs and vanilla extract, whisk for 2 minutes and with a handheld mixer for 3 minutes till it doubles in size. Pour into chocolate mix and beat together. Add in cocoa powder + salt and mix together. Slowly fold in flour. In a 9x9 baking dish with parchment, spread brownie mixture evenly. Bake for 30 min. Take out of oven and let cool. * While cooling make cannoli topping by combining ricotta, mascarpone, vanilla extract, powder sugar and mini chocolate chips. Beat till smooth and place in piping. * Pipe cannoli topping on top of brownies and drizzle chocolate on top if desired.
