Save this for van building tips! First, plan EVERYTHING. The clearer you are on your exact layout, the wood you're going to use, the appliances you're going to buy, etc. the better you'll be able to save up the money you need. We kinda made it up as we were going for our entire build, and we spent more than we probably needed to. As for the stove, counter space is a super limited resource and it's surprisingly nice to be able to put your stove away and more room. Do what works for you but just know that we have tried both and prefer a portable one. Even if you plan super well you will run into costs you didn't expect, like new saw blades, caulk and adhesive, more screws, replacing broken floor planks or poorly cut wood, etc. over multiple months, it can be hundreds of dollars or more. So just expect it and save a little extra In terms of solar and power capacity. We have 400W of solar and 200Ah of batteries, but we also have pretty low power needs. If we were trying to run an AC or an inverter over 1000W, I would probably have added more. Last, try to run more things on 12v power. You can get usb ports to charge your phone directly, and there are even ones that are powerful enough to charge laptops. You can run pretty much all appliances except an AC unit on 12v power, you just might have to buy ones that are meant for the lower voltage.
