@cookwithchay: Healthy Egg Salad Lettuce Cups 1. Romaine lettuce 2. 5 boiled eggs 3. 2 heaping tablespoons of mayonnaise 4. 1/4 cup sliced celery and 1 diced jalapeno or Serrano pepper 5. 1 teaspoon salt , fresh cracked black pepper, paprika 6. One tablespoon yellow mustard 1. Add eggs to boiling water and cook 10 minutes. Remove and add the eggs to ice water to shock the eggs and stop the cooking process. Remove the shell. 2. Slice up the celery and jalapeño. 3. To a cutting board add the boiled eggs , celery, jalapeño, salt , black pepper, paprika, mustard and start chopping. 4. Refrigerate or use right away. 5. Add scoops of egg salad to a romaine lettuce. 6.
