Never understood pan frying veal or chicken to a beautiful crust and then covering it with sauce to make it soggy. I put mine on top of the sauce.

The cheese is a smoked provolone. It has a yellowish rind and looks like munester when sliced. Hope that helps.

my trick: don't sauce the cutlet, just cheese. Then oversauce the pasta to make up for it. The breading doesn't get so soggy and the dish eats better. You're welcome
