SOUFFLÉ PROTEIN PANCAKES 🥞🍓🫐 These were so delicious 😍 I’ve been dying to try these Japanese style fluffy pancakes so I had to make a protein version at home! Save for later☝🏼 •432 kcals (including toppings) •41g PRO, 29g CHO, 14g FAT Serves 1: -2 small eggs -25g of self raising flour -25g of protein powder of choice -1 tsp of baking powder -Pinch of salt -3-4 drops of sweetener (I use toffee flavdrops) -30ml of low fat milk -Oil spray -50g of 0% non fat Greek yoghurt -Maple syrup (I used sugar free but you can use regular) Berry Compote: -80g of frozen mixed berries -1 tbsp of chia seeds -Lemon juice, a squeeze -1 tbsp of sweetener (I used sugar free maple syrup) -50ml of water Method: 1. Separate the egg whites from the egg yolks. Add the yolks to a bowl along with the milk. Sift in the flour, protein powder, baking powder and salt. Whisk together with the sweetener until smooth (it will be a thick batter).  2. In another bowl whisk the egg whites and beat until it forms stiff peaks. Test this by turning the bowl upside down and the egg whites will stick. 3. Gently add a spoonful of the egg whites to the batter and fold in. Then add the rest of the egg whites and gently fold until combined (be careful not to beat the egg whites as the bubbles will reduce).  4. Spray a pan with oil on a low heat and spoon on the batter (keep a few spoonfuls of the batter for later). Then cover with a lid for 2 minutes. 5. Remove the lid and add a spoonful of the batter on top of each pancake. Cover for 1 minute. Flip and cover again for another 2 minutes until cooked through (I got 4 pancakes).  6. To make the berry compote, add the berries, chia seeds, sweetener, lemon juice and the water to a pot on medium heat. Let it come to a boil and keep stirring to break down the fruit. Teduce the heat to simmer for 5 minutes or so (you may need to add more water). When the sauce has reduced and it’s a jam consistency, it is done.  7. Assemble the pancakes with all the toppings.
