Chilli con carne loaded sweet potato fries 😍 These were lovely! 100% recommend trying this. Ingredients: (Per portion) 200g lean beef mince 200g tinned tomatoes 200ml water 200g sweet potatoes  Small handful spinach Mushroom 25g cheddar cheese  1/2 onion 1/2 carrot 2 garlic cloves 1 tsp tomato paste 1/2 tsp cumin 1/2 tsp chilli flakes  1/2 tsp smoked paprika 1/2 tsp ground coriander Salt Black pepper 1 tsp coconut oil Macros: 520 calories 50g protein 36g carbs 19g fat Method: 1. First grate the carrot and dice the onion. Cook in a large pan for 5-10 mins over a medium heat with a little coconut oil and some salt. 2. Then add the mushrooms and cook for 5 minutes. Now remove everything from the pan and set aside. 3. Whack in the beef mince, break it up, and cook until browned all over. Then add the veg back in. Add the seasoning, cook for 1 min, then add tomato paste and cook for 2 mins. 4. Pour in tinned tomatoes, fill the tin with water and add that too. Mix well and then leave to simmer for 30 minutes over a low heat. 5. Chop your sweet potato into fries, wash thoroughly, then boil for 5 mins. Drain them, then let them steam dry. 6. Add a little coconut oil and Maxi’s SPG. Air fry for 20 mins at 200 degrees celcius. 7. Add spinach into the chilli con carne, along with chopped fresh coriander. Mix and leave to simmer. 8.
