As a kid, whenever I saw canned sardines in tomato sauce being cooked up on the stove I remember thinking, “Maybe I’ll just eat cereal for dinner tonight.” But it’s a dish my grandparents, who lived with us, would make all the time. My grandpa (tatang) worked at a flea market here in the US and he would bring home vegetables everyday. Tomatoes, onions, eggplants, avocados etc. He was always imcredibly amazed at the wide variety of food here in America. Tatang was from a small country town in the Philippines and food wasn’t always easy to get especially during the war. And it was during that time he had come to cherish canned food because it could last a long time without any refrigeration. So we always had cans of sardines that he would add fresh veggies he brought home.in my 5 year old eyes, it looked like some of the nastiest food ever. I refused to eat it. Now, as an adult, I appreciate and have come to love it. It’s something I make to remember Tatang. Ingredients 2 tins of sardines (they are Filipino sardines that already come with tomato sauce but I like @wildplanetfoods cuz they’re not as salty) 1/4 Onion sliced ½ cup Tomato sauce 1-2 Tbsp Water 1 tsp Soy sauce 1/2 tsp sugar Pinch of red pepper flakes Black pepper 1 Green onion chopped 1. Use the oil from the tinned sardines to cook onions garlic and red pepper flakes. Cook until softened. 2. Add in the sardines, tomato sauce and water then cook for a few minutes till the sauce thickens. 4. Season with pepper and serve over steamed rice. Garnish with sliced green onions.
