I can honestly say that I’ve never tried a meat someone said “tastes just like chicken” and had it actually taste like chicken. Frog legs, rabbit, rattlesnake, and alligator, NONE of them actually do

while it's something not everybody has experience with I think the closest comparison is pheasant. the texture and color plus flavor I think are closer to pheasant than to chicken

rabbit is stringy chicken is not. also snake has a closer texture and taste to rabbits. squirrel would also be a close call
