The perfect pretzel recipe  3/4 cup warm water  1 teaspoon active dry yeast  1/2 teaspoon salt 1/2 Tablespoon brown sugar or granulated sugar 1/2 Tablespoon melted unsalted butter 1.5-2 cups bread flour (you can use all purpose flour but bread flour tends to make the dough more stretchy and easier to work with) Mix your warm water and yeast together in a bowl and let it sit for 5 minutes. Optionally, slice the dough rope into even bite-sized pieces for pretzel bites. Cover your pretzels and let them sit for at least 30 minutes to another hour. Baking soda bath Add a tablespoon of brown sugar A quarter cup of dark beer And ~1/2 cup or more of baking soda to a pot of water and bring it to a simmer (optional: you can bake your baking soda at 350° for 30 minutes to help with your pretzel color) Add your pretzels to the bath for 15-20 seconds and then add them to a baking sheet and sprinkle them with coarse salt. Bake them at 425° until they’re golden brown.
