@creamy_confusion: 🥫FASOLAKIA… …Greek Bean & Potato Red Stew (Day 2/10 Orthodox Easter Recipes) Today’s recipe is for the vego and vegans and anyone who is doing lent this year. Fasolakia is a sauce beans and potato mix and tastes like Greece, I can’t explain it. Enjoy with bread and let it soak up the sauce and if you’re not doing lent chuck on some feta for a good time. 1 brown onion (diced) 5 white potatoes (peeled and cut into medium cubes) 2 tbl sp paprika 2 tbl sp oregano 1 tbl sp cracked black pepper 2 tbl tomato paste 400gm canned diced tomatoes 300-400gm green beans (trimmed) Salt (to taste) Cooking oil 1. Place heavy pot on medium heat with a drizzle of oil. Add onion in and sweat down for a few minutes, don’t burn, add cold water if needed. Add in paprika, oregano, pepper and big pinch of salt with more oil. Allow to sizzle and mix through over a minute. Add tomato paste, mix through and cook out for a minute. 2. Add in canned tomatoes, refill can twice with water and add in (800ml worth) and bring to a high simmer. Once high simmer reached, add in green beans, mix through, season with salt and allow to simmer for 45-50 minutes. Cook until potatoes can be pierced with a fork easily. 3. My Italian family makes this but we add sausage and use flat beans instead of string beans. We make it at the end of summer and jar it to eat it in the winter

We would have this during Greek lent and outside of lent Mum would brown off small lamb chops at the onion stage…would fall off the bone and make a very small amount of meat go a long way. So healthy!
