Steak Fajita Bowls ✨ Ingredients: For the steak & marinade: 	•	1 lb flank steak 	•	2 tbsp olive oil 	•	Juice of 2 limes 	•	¼ onion 	•	3 garlic cloves 	•	1 tsp cumin 	•	1 tsp chili powder 	•	1 tsp oregano 	•	1 tsp salt 	•	½ tsp black pepper For the fajita veggies: 	•	1 red bell pepper, sliced 	•	1 orange bell pepper, sliced 	•	1 onion, sliced 	•	1 tbsp olive oil 	•	½ tsp garlic powder 	•	½ tsp cumin 	•	½ tsp chili powder 	•	Salt & black pepper to taste 	•	Juice of ½ lime For the cilantro lime rice: 	•	1 cup dry jasmine rice 	•	2 cups water 	•	Juice of 1 lime 	•	2 tbsp chopped cilantro 	•	Salt to taste For the guacamole: 	•	2 ripe avocados 	•	⅓ cup pico de gallo 	•	Juice of ½ lemon 	•	Juice of ½ lime 	•	Salt to taste For the pico de gallo: 	•	3 Roma tomatoes, diced 	•	¼ onion, finely diced 	•	Chopped cilantro (to taste) 	•	Juice of ½ lime 	•	Juice of ½ lemon 	•	Salt to taste Directions: 	1.	Blend together the olive oil, lime juice, onion, garlic, and spices to make the marinade. Pour over the steak, coating on both sides. Cover and marinate in the fridge for at least 30 minutes or for best results 2–8 hours. 	2.	Shake off excess marinade and cook the steak in a hot cast-iron skillet with a little oil. Sear on both sides until desired doneness. I did mine 4-5 minutes on each side for medium. Remove the steak and allow it to rest. 	3.	In the same skillet, sauté the bell peppers and onion in olive oil until softened and lightly charred. Season with garlic powder, cumin, chili powder, salt, black pepper, and a squeeze of lime juice. Add the sliced steak back in and toss to combine. 	4.	Cook the rice according to package instructions. Once done, stir in lime juice, chopped cilantro, and salt. 	5.	To make the pico de gallo, combine the diced tomatoes, onion, cilantro, lemon juice, lime juice, and salt in a bowl. 	6.	For the guacamole, mash the avocados and mix in the pico de gallo, lemon juice, lime juice, and salt to taste. 	7.
