If you have extra pears laying around or find them on sale and don’t know what to do with them, try this recipe. They will last 3-6 months in the fridge. FERMENTED CINNAMON PEARS 4 pears 3 cinnamon sticks 3-4 tablespoons maple syrup 4 cups water 1/4 cup apple cider vinegar -Cut pears into slices or chunks, leave skin on for more flavor. Remove core. -Mix together water and maple syrup, mix until dissolved. Add apple cider vinegar and mix -Layer pears in a quart sized mason jar along with the cinnamon sticks. -Pour brine over the pears until they are fully submerged. -Cover with a fermentation lid or a regular lid (burp daily to release gas if using a regular lid). -Allow to sit at room temperature for 5-7 days. Taste after 5 days until desired level of fermentation. -Place in fridge with tight lid once fermented to your liking. Enjoy! For making a pear sauce (similar to applesauce), once fermented, sepearate liquid and pears. Blend pears in a food processor.
