@culinaryscrolls: Easy, yet flavorful dinner at home. Crispy chicken cutlets topped with an arugula salad. Roasted garlic and cherry tomatoes in a cream sauce with pappardelle. Pasta: 16 oz pasta 1 pint cherry tomatoes 1 head of garlic 2oz sherry wine 10oz heavy cream 1/2-1 c parmesan 1/4 c reserved pasta water Salt, pepper, garlic powder to toasts. Olive oil Drizzle olive oil, salt and pepper over cherry tomatoes and garlic bulb. Bake at 375 for one hour. Squeeze garlic from bulb and mash. Cook in olive oil a few minutes on med heat. Add wine, cook a few minutes. Add heavy cream, Parmesan, reserved pasta water. Season with salt, pepper, and garlic powder to taste. Once sauce slightly thickens add pasta and top with more Parmesan. Chicken: 1 lb chicken breast (thinly pounded) Seasonings (s & p, garlic powder, paprika, Italian seasoning, oregano). 1 c flour 2 eggs + 2 tbsp water 1 c Italian breadcrumbs 1/2 c panko breadcrumbs Pound meat, evenly. You want it thin, but not too thin. Season, dip in egg wash, then breadcrumbs patting the breadcrumbs onto the chicken well. Cook in olive oil on medium heat on both sides until cooked throughly. Top with arugula salad. Arugula salad: 1 handful arugula Drizzled with olive oil, squeeze the juice of half a lemon, season with salt and pepper.
